Our best known extra-virgin olive oil is called Signorolio, made from pressing olives that are still unripe and from areas that specialise in them.
The origins of the name date to the early 1900s, when those who came to Sarteano and asked where they could buy the best olive oil were told to go to “La Peschiera” and ask for il signore (which in Italian means “the boss”, but also “God”), the nickname given to the then head of the family, a thin gentleman vaguely reminiscent of Christ on the cross.
We have selected some of the best Tuscan labels of Rosso and Brunello di Montalcino, Nobile di Montepulciano, Chianti Classico and Vinsanto to sell in our wine store. Alongside these wines we also offer an excellent selection of pecorino cheese from Pienza, salami, prosciutto, honey, mushrooms, truffles, jams and other Tuscan delicacies.
We make extra-virgin olive oil in our two olive mills for our own shop and for third party retailers. Most of it is Signorolio grade olive oil, a delightful opaque and low acid, lightly filtered, olive oil.
Tistarelli Olive Mill also sells the extra-virgin olive oil from Tuscan Reticchio olives, filtered through cotton and with a clean, balanced and harmonic flavour, on-line. Cinque Monti olive oil is also filtered through cotton, and is well-structured, fragrant and fruity oil.
Organic Signorolio olive oil is made from olives picked in late October and milled in a continuous cycle press. It boasts the ICEA ethical and environmental seal.
The Protected Geographic Indication denomination, or I.G.P. Toscano (Indicazione Geografica Protetta), has been awarded to the olives grown in the groves of the area from Sarteano e Chianciano, indicating compliance with the regulations laid down by the Consorzio di Tutela dell’Olio Toscano.
